Cucumber Pasta

The cucumber and parsley add a coolness to this dish which makes it perfect for a warm summer’s night. It’s quick, easy and most importantly, tasty. Pair it off with a nice white and voila, a simple dinner.


Salt + Pepper
Olive Oil

Bring a pot of water to boil and cook the pasta.

While the pasta is cooking, caramelize the onions and cooked with the chicken. Flavor with salt and pepper. When the chicken is about half done, add the sliced cucumbers and parsley.

Toss with mix with the pasta and some olive oil. Add salt and pepper to taste.

    Sounds like a nice and light lunch or dinner. Whole wheat pasta sounds good with this dish.
