The problem with making a large amount of food is that you have leftovers. When you follow a recipe like mine, you have a lot of leftovers. This means that you have to come up with creative ways of making those leftovers so that you aren’t stuck eating the same thing three times a day for a week.
Here’s something you can do with leftover Chili to make a unique breakfast.
Chili (see recipe)
Cook the eggs while you warm up the tortilla shell. Wrap it up like a burrito. Serve with whatever sides you want to. In this picture, I tossed some spring greens and apple slices with olive oil and balsamic vinegar.
As an added bonus, the natural fiber in the beans help to regulate your blood sugars which keeps your energy levels at an even keel throughout the day. In other words, beans are an ideal breakfast!
